Chris Condos has a reputation as one of the early advocates the organic wine movement in the United States. For the past two decades, he has made a name for himself across the country making wines in his own way. As an early adopter of organic and biodynamic farming, Chris put into practice sustainable farming techniques a decade before they became mainstream, with the focus on producing low intervention wines that let the grape speak for itself. Now he brings us the Cassiday Blare 2016 Pinot Noir, a striking wine that will be an instant classic.

Powerful, with notes of dark berries and plum, the mouthfeel is silky. Subtle notes of savory herbs and bramble tease out of the Pinot Noir as the wine opens up. It’s enjoyable to drink on its own but really shines with food. We’ve been enjoying it with pork tenderloin and roasted mushrooms that really brings out the earthiness of the Pinot Noir grapes.

Chris Condos is a California native, and after studying Plant Ecology at SF State and Viticulture and Enology at UC Davis, Chris began his career at Pine Ridge Winery in 1995. Just two years later, he started his own vineyard to focus on alternative varietals and hand-crafted wines using advanced organics — practices that are still considered progressive even by today’s standards. He still makes wines with his wife using these practices that let the grapes speak for themselves.

There aren’t many wine regions in the world more diverse than California. The warm days and cool nights are perfect for producing concentrated and expressive grapes over the long growing season. With vineyards on the sea swept Central Coast; the mountainous, jagged terrain of Northern California; and the storied plots of Napa, winemakers can be exacting in choosing the specific climate and terroir they are looking for when making their wines. With nutrient rich soils and scores of different microclimates, California is a gift to ambitious winemakers.

Chris works incredibly hard to make sure that every grape is fully expressed in his wines. This wine displays the classic tastes of Pinot Noir: cherry, ripe red fruits, and a touch of smoke.

Try this Pinot Noir with grilled meats.

Pinot Noir pairs well with salmon or tuna and meaty white fish, lean red meats, duck, turkey, and fresh herbs like rosemary and thyme. It is also a great choice for the Thanksgiving table.
