This Chardonnay comes from three vineyards planted to the selection called 'Shot Wente' -- a botanically mutant form of Chardonnay developed at the Wente Brothers Nursery in the 1930's. (The origin of the name is the subject for a later, and longer, discussion.) Shot Wente Chardonnay grapes are smaller than those we normally see in California. That increases the skin surface available to a given volume of juice. As a result, the wines tend to be rich and flavorful. Our winemaking is totally natural: indigenous wild yeast for the fermentation, wild and naturally present malo-lactic bacteria, an absence of any additives or fining agents, and no racking. The finished wine is rich and creamy, with a lovely aroma of grilled bread and lemon zest. Chardonnay pairs well with poultry dishes, pork dishes, shellfish, and soft cheeses.
