2010 Noon Eclipse, Noon Eclipse is Noon's signature wine. Noon Eclipse is a full bodied wine which benefits from about 10 years of cellaring or a double decant and 24 hours of breathing time prior to drinking when young. Noon Eclipse is a fascinating blend of Grenache and Shiraz with small portions of Graciano and Cabernet Sauvignon included. Up until the 2008 vintage, Noon Eclipse was made from Grenache (approx two thirds) and Shiraz (the balance, approx one third). Food matching suggestions - Noon Eclipse drinks best in winter, when it is cold and is a treat with rich foods because it is such a full bodied and robust wine. I wouldn't be drinking a Noon Eclipse with a light summer meal. When young, try it with a hearty casserole and when older a char grilled steak with house cut chips or roast chicken with roast potatoes and green vegetables. Fruit used to make Noon Eclipse is sourced from old estate grown bush vine Grenache, planted in the 1930's and 1940's. The Shiraz also comes from the estate, the "20 Rows Block" single vineyard, in Langhorne Creek, this block was planted in 1962. The cabernet comes from a single vineyard known as "The Fruit Trees Block" which was planted in 1972 and the Graciano from estate bush vines planted in the 1990's. Winemaking - Noon Eclipse is usually high in alcohol as winemakers use ripe fruit from low yielding vines. Drew Noon doesn't set out to make a wine high in alcohol but his Grenache shows its best when is best when fully ripe, avoiding green/hard tannins. . Fermentation is in small open vats which are hand plunged to extract tannins and colour. Small Basket Presses are gently used to extract the wine from the skins. Generally around 12,000 bottles of Noon Eclipse are made each vintage. Noon Eclipse is matured in a combination of French and American oak barrels (300L and 15% new) and large old oak casks for 18 months. The use of barrels in this manner supports the wine with aromatics and overtones rather than dominating it. Tasting Notes - 2010 Noon Eclipse - Grenache 45%, Shiraz 35%, Graciano 15% and Cabernet Sauvignon 5%.
