Introducing Clonakilty Single Pot Still Irish Whiskey, the maiden whiskey to be 100% distilled and matured by the multi-award winning Clonakilty Distillery. This is the quintessential style of Irish whiskey, distilled from barley grown at the edge of the Atlantic ocean on our family farm in County Cork, and triple distilled in copper pot stills. It is here on the Southwest coast of Ireland that centuries of sea mist, soft rain, and ocean spray provide a complexity to the soil that permeates through to each individual grain of our barley. Post extra-long 100+ hour fermentation, and distillation at our eco-efficient distillery, the whiskey is matured in ex-Bourbon, Amontillado sherry and Oloroso sherry casks at our Atlantic Ocean Warehouse. Here the coastal air imbues the casks with a distinct maritime flavor profile. Following cask disgorging, we gently cut the whiskey to bottling strength over a period of up to two weeks, allowing for a harmonious blending of flavors. Finally, all of our whiskey bottling is undertaken in-house, to ensure authentic, unparalleled quality to our customers
