Herbal liqueurs that also showcase bitterness create a category of spirits called amari. These are then commonly broken into two subcategories, those sipped prior to dinner, apéritifs and those pour after the meal, digestifs. The premeal spirits tend to be more citrus forward and sweetened with a light body sugar. Those consumed after the meal highlight more earthy, cola, and spice notes while also have a thicker mouthfeel from a less refined sugar used to sweeten the spirit. The Block’s Apéritif will give you the citrus expected, while also surprising you with subtle complexity from coriander and cardamom. The sweetness is just enough to round the spirit and link the flavors and bitterness. We developed this apéritif to shine on both ends of the cocktail spectrum. It can bring the punch needed for a Negroni but won’t scare the champagne in a Spritz either.
