Source: Feliciano vivanco distillery, arandas, Jalisco, Los Altos, nom 1414, since 1929. Agave: Single estate, Los Altos agave. Cooking: Stone / brick ovens. Milling: Roller-mill, 100% first-press free run agave juice. Yeast: 100% wild yeast. Fermentation: Open-air stainless steel tanks; fibers are added to the tanks to increase fermentation and flavor. Distillation: Twice distilled in small copper pots; fibers are added in the stills to add more complexity and agave flavor; only heads and hearts are used. Water: Proprietary vivanco ranch 800-foot-deep well, rich in terroir expressive minerality. Bottling: Bottled unfiltered by hand at the source.
