Historias y Memorias is an artisanal Mezcal made in San Matatlán, Oaxaca, Mexico by Maestro Mezcalero Jose Luis Hernández. The agave is crushed by horse-drawn tahona and then fermented using natural yeast for 5–8 days in open wooden vats. The fermented agave is then distilled twice in copper stills.
