Corsair

Barrel aged gin has become increasingly popular with Corsair leading revival of this style of Gin.  Like our unaged gin, we distill in small batches using a vapor basket system, however there is a slightly different botanical medley to ensure a flavor profile that plays well with our aging process.  We rest the resulting gin in our used spiced rum barrels to impart vanilla, cinnamon, nutmeg, cloves, and wood to the finished product.

TASTING NOTES
Classic gin forward nose evolves into a spice medley of cinnamon, clove, and coriander.  Anise, black licorice, clove hit the palate initially but give way to vanilla and rum notes before a clean dry finish.

Old Punk is part of Corsair's experimental range. This is made by flavouring its whiskey with pumpkin, cinnamon, ginger, nutmeg and allspice, and then ageing it in American oak. A unique flavoured whiskey.

Corsair Old Punk Pumpkin Spice Whiskey

The nose starts of with a pleasantly strong overall intensity, baked apples with cinnamon/cassia undertone. The nose is also moderately floral/perfumed, a mild scent of char is also present. The palate carries over a balanced blend similar to the nose with a long, strong finish, adding the sharpness of the black pepper and the apple/cinnamon.

Gold Medal at the international Review of Spirits. Made from a mash of 80% malted Rye and 20% chocolate Rye. Aroma of milk chocolate and peanut butter along with hints of dried fruit and caramel.

Aged in small new American Oak casks (15 and 30 gallon) with a medley of spices that produce a dry, vanilla and fall spice note forward rum.   This rum is perfect for the traditional basics (Daiquiris, Cuba Libre, etc) or complex mixed cocktails. 

TASTING NOTES
Heavy notes of vanilla, cinnamon, nutmeg, and cloves on the nose and carry through to a vast and complex palate with a dry but lingering spice finish.

We use three individually smoked malts (cherrywood from Wisconsin, beechwood from Germany, and peat from Scotland) to craft this deep and complex American single-malt whiskey. TASTING NOTES
Smoke and notes of cherry pervade the palate, ﬁnished by a slight brininess from the mossy peat. Pot distilled then aged in new American charred oak, Triple Smoke has the sweetness of an American whiskey with the rich smoke of an Islay single malt scotch.

Corsair Triple Smoke Malt Whiskey

Unaged and made in very small batches. The hand worked stills preserve the peppery, spicy cereal taste of rye, resulting in a moonshine full of character. The nose is grainy yet smooth. Finish that has a nice balance of grain and sweetness.
