Real absinthe. No artificial ingredients, no gimmicks. The first legal American absinthe released after the U.S. ban was lifted in 2007, St. George Absinthe Verte remains one of the most acclaimed and respected spirits in this category. And it has a monkey on the label!

The Spirit

There’s a lot of hype and mystery surrounding absinthe, but the process itself isn’t really all that esoteric. The real art is in finding just the right ingredients and creating a symphony of flavor.

What’s in it?

Made from a host of real botanical ingredients, ours is a layered and evocative expression of this beguiling and highly spirituous herbal elixir.

We begin by infusing brandy with the unholy trinity of wormwood, fennel, and star anise. We then distill this infusion on our 1,500-liter copper pot still. After that, we perform a secondary infusion of mint, tarragon, opal basil, lemon balm, hyssop, and stinging nettles.

The secondary infusion is what gives absinthe color; just after the secondary infusion, our absinthe is an intense emerald green. By the time we bottle it and the bottle reaches you, the absinthe will have turned its characteristic feuille morte (dead leaf) hue due to chlorophyll from all the botanicals breaking down with time and exposure to light.

The Process

Distiller Lance Winters considers absinthe the pinnacle of the distiller’s art form. Why? Because creating a beautiful absinthe means taking a number of loud botanical ingredients and making them sing in harmony.

For us, it didn’t happen overnight.

While the U.S. ban was still in place, it was illegal to sell absinthe, but not to distill it. Commercial viability has never been what motivates us, so needless to say, we distilled a lot of absinthe during that period. In fact, it took Lance about 11 years to perfect his absinthe formula. When the American ban was overturned in 2007, we were ready.

Lines formed around the block and helicopters flew overhead when we released our first batch of Absinthe Verte, but today it's pretty easy to find.

The Experience

A heady, herbaceous smack to the senses. It opens with spicy black licorice and then slowly evolves into citrus and grass profiles with a dose of sarsaparilla. Because of the abundance of essential oils, it’s rich and viscous on the palate—even at 120 proof (60% alcohol).

To bring out another level of vivid flavors and a lovely louche (milky cloudiness) that seems to glow from within, a single large ice cube is ideal. Adding water further releases botanical oils into solution, deepening the louche and intensifying the heady, floral aroma.

We developed our formulation over years of patient experimentation and think it’s pretty much perfect just as it is. We don’t advocate adding sugar to our absinthe—or to any other artisanally distilled absinthe for that matter.

In cocktails that call for an anise spirit, St. George Absinthe Verte adds complexity and depth of flavor.

You won’t hallucinate when you drink our absinthe, but you might fall in love. Everyone else has.

The Spirit

As the name implies, our All Purpose Vodka works in cocktails of all stripes, but it truly shines when sipped neat or over ice, where its supple flavor and decadent mouthfeel can be fully appreciated.

What’s in it?

Bartlett pears (yes, pears) are the secret here. Why? Decades of distilling Bartlett pears has shown us just what this gorgeous fruit is capable of—especially when put through our Holstein stills.

Using the same flavorful and aromatic pears here as in our flagship pear brandy makes perfect sense, delivering a spirit with no overt pear flavor but with substantial body and subtle floral notes—and creating a vodka that is uniquely St. George.

The Process

To make our All Purpose Vodka, we distill our flagship pear brandy up to 95.1% ABV and blend the resulting distillate with a non-GMO base spirit. We then filter the resulting vodka to remove visible impurities before bottling.

With a bracing dose of bitterness, a bright pop of citrus, and intriguing sylvan notes inspired by distiller Lance Winters’ formative experiences growing up in California in the 1970s, Bruto is a bitter aperitivo liqueur that makes us as proud as it does thirsty.

The Spirit

We love Italian aperitivos, but we thought there was room in the world for an American aperitivo that expresses a clear point of view and a unique sense of place.

What’s in it?

Growing up in post-Summer-of-Love California, master distiller Lance Winters experienced plenty of sandalwood incense in his formative years. These early olfactory impressions were a big inspiration behind the proprietary blend of herbs, roots, and botanicals that give Bruto its distinctive signature. While we keep most of these under wraps, we will say that the bitterness comes from gentian root; the citrus notes mostly from California-grown Seville orange; and the woodsy notes from balsam fir and Cascara sagrada (bark from the California buckthorn).

The Process

From start to finish, Bruto Americano took about three years to come together. We developed a process where some botanicals are hot-steeped while others are cold-extracted, which allows each one to really shine. The name is a little tongue-in-cheek. Bruto means brutish in Italian, as in “what kind of American would mess with the great Italian aperitivos?” The label is an homage to Italian Futurism. Its design was a collaboration between master distiller Lance Winters, head distiller Dave Smith, and bartender/graphic designer Brandon Josie.

The Experience

Vibrant citrus, with notes of cinnamon, sandalwood, and forest on the nose. Initial palate entry is bitter, followed by a woodsy mid-palate and lingering bitter/citrus finish.

Bruto and Soda is a brilliant session drink. Also recommended in a Negroni, Boulevardier, Americano, and in your favorite Spritzes.

While it leads with a nose of fresh green chiles, this surprisingly nuanced vodka explodes with fresh sweet bell pepper on the tongue before finishing with tangy, vegetal notes that make it transformative in cocktails and sublime sipped over ice.


What’s in it?

While we love spicy foods, we didn’t want to make a pepper vodka that was all about setting your mouth on fire. Peppers are a fruit, after all, and we wanted to capture all the juicy qualities of that fruit in addition to the spice. We use five California-grown varieties in our Green Chile Vodka (jalapeños, serranos, habañeros, red and yellow bell peppers) that build layers of sweet, savory heat. Lime peel and fresh cilantro add even more vibrancy and depth of flavor.

The Process

Green Chile Vodka days at the distillery are intense! Imagine 1,500 liters of non-GMO, high-proof alcohol packed with crushed jalapeños and lime peel. We distill that mixture, sending the vapor through a basket that holds the cilantro—the perfect way to capture the delicate nuances of this fragrant herb. We then infuse the serranos, habañeros, and sweet peppers separately so we can adjust the blend to account for seasonal differences. To finish, we filter to remove visible impurities before bottling—the light green tint that remains is the result of the pepper infusion we perform just prior to filtration.
