Glendalough is a craft distillery nestled in the wild Wicklow mountains just south of Dublin in Ireland. They make their spirits using fresh wild ingredients from those mountains. From foraging wild, seasonal plants for their gins, to even felling their own trees for their whiskey casks, they try to get a taste of their mountain home into each bottle. They are one of the only (if not the only) distilleries in the world to employ a full time forager. This ensures the wild mountain plants are distilled fresh every day, to capture more essential oils. This use of fresh and organic ingredients, they say, gives their products much more depth of flavor. Each sip should be a little taste of an adventure in the mountains - much like they go on every day in order to make their drinks.
