Arkenstone Sauvignon Blanc

The Arkenstone Sauvignon Blanc comes from a very steep very rocky part of the Arkenstone vineyard along the western facing souther slopes. It is planted in rocky white volcanic soil similar to what is found in parts of Sancerre and Southern Bordeaux. Next to the Sauvignon Blanc there is a small block of Semillon planted as well. The Sauvignon Blanc is fermented in a mixture of concrete egg, new French oak and used French oak in a dedicated room in the Arkenstone cave that is cooled down to 50ºF, making for a cool, slow gradual fermentation. The wine is aged a total of 11 months Sur-Lie and is then blended with a small percent of Semillon and bottle aged an additional 18 months before release.
