In 1977, Paolo Marolo created the Santa Teresa Distillery in Alba, the famous wine town in Piedmont. Since he insists on using traditional methods, not one part of the distillery is automated, allowing Marolo to actively participate in every step of the process. This is a liqueur made from the infusion of Camomile in grappa distilled from the Nebbiolo grape. The Camomile flowers are picked when they are fully ripe, dried, strained, and left to steep in the grappa for eleven months. Sweeter than most grappas, it offers hints of honey, lavender, and green tea that complement the rich flavors of Camomile.
