This grappa is made from Vespaiolo and Tocai grapes that are left to dry on screens until the sugar content reaches 30-40%. The "noble rot" that attacks the grapes during the drying process creates organoleptic compounds which are valuable to the production of grappa. The grapes are the same as those in Fausto Maculan's famous Torcolato dessert wine, made in the hills of Breganze where the soil is volcanic, calcareous and marly.

In 1977, Paolo Marolo created the Santa Teresa Distillery in Alba, the famous wine town in Piedmont. Since he insists on using traditional methods, not one part of the distillery is automated, allowing Marolo to actively participate in every step of the process. This is a liqueur made from the infusion of Camomile in grappa distilled from the Nebbiolo grape. The Camomile flowers are picked when they are fully ripe, dried, strained, and left to steep in the grappa for eleven months. Sweeter than most grappas, it offers hints of honey, lavender, and green tea that complement the rich flavors of Camomile.

Marolo Grappa Camomile

Made from the pomace of Nebbiolo grapes grown in the Barolo region of Italy, it ages for 36-42 months in 228L oak barriques (70%) and large, 600L acacia barrels (30%). A rich amber, with ample and suitably mature aromas, this full-flavored grappa is balanced by a velvety smooth and elegant finish.

Paolo Marolo is widely regarded as one of the best Grappa producers in the world. He is credited for being a leading innovator in Alba, the heartland of Grappa production, for departing from the tradition of working with a continuous still (used for efficiency in mass production), and choosing instead to work with a bain-marie discontinuous still. This alembic requires fresh pomaces and distills very small quantities much more slowly, but ultimately captures the yields a Grappa that is infinitely more pure, complex, and invigorating, with many dimensions of aromas and flavor. The aromas on this Brunello grappa are clean and fragrant, with the fruity aromatics that let you know this is grappa, and not anything else. The palate is focused, wih strong flavors, but the finish is more gentle, allowing the flavors really hang in your mouth for a while. This is not the after dinner firewater you've heard about. This is serious single varietal grappa.

This alembic requires fresh pomaces and distills very small quantities much more slowly, but ultimately captures the yields a Grappa that is infinitely more pure, complex, and invigorating, with many dimensions of aromas and flavor. Moscato Grappas are generally more well-received by the average drinker due to their lifted aromatics and softer palate. This is 100% Moscato d'Asti. The aromatics of the Muscat grape are on full display in the nose, with flowers and zesty citrus notes coming forward. The pomace fermented for three days, unlike most Grappas where it is immediately distilled after crushing, for added depth. The alcohol is soft of the palate and the spirit finishes long with lingering intensity.

Chardonnay grape pomace is selected and collected immediately after pressing, when it is fresh and soft. Artisanal batch-method distillation ensures the essence of the original grape will remain present in the final grappa. Production is limited to the individual year’s harvest.
