Hayman's London Dry is a classic, intense, and versatile gin. Plenty of dark, oily juniper forms the backbone for a complex interplay of spice and a little citrus. The rich profile dilutes beautifully, providing the backbone for classic stirred, shaken, and long cocktails. Make Martinis with a lot, or a little, vermouth. Kick up your sour drinks, and enjoy a luxurious, proper G&T.
The Hayman family is the oldest gin-distilling family in London, dating to 1863. The defining characteristics of Hayman’s Gin include: use of three small copper-pot stills; 24-hour maceration of botanicals, for extra concentration; and the use of 10 classic botanicals in varying proportions depending upon style. (The "Hayman 10" are juniper, lemon, orange, cassia cinnamon, Ceylon cinnamon, nutmeg, angelica root, orris root, coriander seed and licorice root.)
With unmistakeably classic flavours, it is a perfect partner with tonic and a wedge of lime as well as in some of our favourite gin cocktails.
We steep the botanicals in grain alcohol for a full day prior to distillation which allows the oils and essences from the botanicals to impart in to the alcohol. We carefully ensure that there is a consistent balance of juniper, coriander, lemon and orange peel which is vital in creating this traditional style. Orris root, cinnamon, cassia bark and nutmeg give the dry characteristics and add to the depth of flavour.
