Each grape (Sauvignon Blanc) is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of vinification. Press lightly to maintain optimum fruitiness. Assembly of 50% limestone, 30% clay-limestone and 20% flint. Each soil is vinified separately in thermos-regulated stainless steel vats, the limestone brings minerality and finesse; the clay-limestone brings the fruit, the richness, and the flint brings the structure and the minerality.
