The New York Craft Gin is crafted by first distilling their New York Craft Vodka, which is made entirely from corn. Once the vodka has been distilled, it's time for the maceration process with 5 simple botanicals including juniper, coriander, lemon verbena, orris root and bitter orange. "The botanicals soak for 24 hours," says Brian, and "then we redistill the gin through our 300 gallon pot still to remove color and bind the flavors together." As a result, the gin has hints of pine and juniper on the nose, that give way to bursts of floral citrus, grapefruits, orange zest and spicy coriander on the palate. "We bottle at 94 proof," adds Brian, "and like [our] Vodka, our gin is gluten-free and certified kosher."We steep our botanicals in 120 proof neutral spirit made from 100% Corn for 24 hours to produce our maceration. We then distill the gin in our 300 gallon pot still to remove all of the color and bind the flavors. The “Hearts” are captured and blended down to 94 proof for bottling.
